It’s finally cold here! YAY! We needed more comfort food. Tonight we had Barbecue Mini Meatloaves. They were so cute and delicious! To top it off, Chandler made some four cheese mashed potatoes. Now the roomies and I are putting up our Christmas tree, and for dessert I’ll have some carrot cake. What a great night. :)
Ingredients:
- ½ lb. lean ground beef
- Diced sweet onion and green pepper (to taste)
- ½ cup bread crumbs
- ¼ cup bbq sauce, plus additional for topping
- 1 egg white
- Salt and pepper
- 2 tbsp. Italian parsley, minced
Preheat oven to 375 degrees. In a nonstick skillet over medium heat, sauté onion and peppers for 5-6 minutes. Season with salt and pepper. Remove from heat and cool.
In a mixing bowl, combine all ingredients, form into 2 small loaf shaped mounds and top with additional bbq sauce. Bake for 45 minutes.
