I love carrot cake. It is one of my favorite desserts. My mom makes probably the best carrot cake in the whole entire world. (No lie.) Anyway, Chandler and I were sitting around one day and decided that we needed a carrot cake fix. So yesterday we finally made it. And it was DELICIOUS.
Mom’s Carrot Cake!
Ingredients:
- Pinch of nutmeg
- ½ tsp. salt
- 2 cups flour
- 2 tsp. baking powder
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 2 cups sugar
- 1 ½ cups cooking oil
- 4 eggs
- 3 cups grated carrots
- ½ cup chopped walnuts or pecans (optional)
- 1 tsp. vanilla
Mix the dry ingredients together, then add the oil, eggs, carrots, nuts and vanilla. Bake in 3 9-inch cake pans (greased). Bake at 325 degrees until done (25 minutes or so). I added about a half cup of raisins… Chandler commented, “the raisins are a nice touch!”
Frost with cream cheese frosting.
Frosting:
- 1 8 oz. package cream cheese, softened
- Powdered sugar (3? cups – to desired consistency)
- ¼ cup butter, softened
- 1 tsp. vanilla
Mix all ingredients together until smooth. Frost the cake, and top with chopped walnuts if you want.
